It all started in the early 1970s. A San Francisco hippie living in an old school bus got a job in a new Mexican restaurant. He was stoked to find he had a knack for this food thing and took the concept, first to New York, and then on to Bend, Oregon. His sons (Tyler & Conor) have continued the tradition in New Zealand.
